Loaded Chicken Nachos

The Super Bowl is coming and people are planning to watch with their friends and family. Whether you're the one who knows every stat on every player, the one who can't wait for the halftime show, or the one who is watching for the commercials, we have a recipe that will make all Super Bowl viewers smile. 

These loaded chicken nachos are so easy to make - they can be thrown together in less than 15 minutes, perfect for someone preparing to host a party in their home! You can easily customize this recipe based on what is in season or what you have in your fridge! Use wholesome ingredients and make some nachos that you can feel good feeding your family!

Ingredients in Loaded Chicken Nachos

Olive Oil - you can use whatever oil/fat your family typically uses at home, this is just to cook the onion

Onion - red, white, yellow, use your preference! If you plan to add any other fresh veggies that would need to cook, you can add those while cooking the onion - think fresh peppers, garlic, etc. 

Chicken - we used leftover cooked chicken in this recipe, that we shredded. You could also cook ground beef or another protein source after the onion is cooked. We've added leftover bacon to the nachos before and it was delicious! Make sure to use local, pasture-raised meats to capitalize on the health benefits of these meats! 

Spices - chili powder, cumin, coriander, oregano, cayenne, salt; adjust the seasonings according to your family's palate!

Chicken Broth - use this to scrape up any bits that might have charred to the cast iron pan, water or vegetable broth could work as well! Check out my recipe for homemade chicken broth here

Cheese - find a good local cheddar, jack or another favorite cheese

Tortilla Chips - You could make this into a meal by using rice instead of tortilla chips. When choosing chips, try to find ones that are made with simple ingredients that you would use in your kitchen!

Toppings - pick anything that sounds good! We've used hot sauce, plain yogurt, fresh peppers, tomatoes, cilantro, candied peppers - this is the time to look in your fridge and get creative!

Cooking Instructions:

Step One: On the Stove
Heat cast iron skillet over medium heat. Add the oil and heat until shimmering. Add the onion and cook until soft. Then, add the chicken & spices and stir to coat. Stir in broth and scrape up browned bits. Transfer to a bowl & stir in half of the cheese.

Step Two: Assemble
In your cast iron, spread half of the tortilla chips. Cover with 1 cup of shredded cheese. Top with half of the chicken mixture. Repeat with remaining chips, cheese and chicken. 

Step Three: In the Oven
Transfer to oven and bake until cheese begins to brown, 10-15 minutes. Enjoy with desired toppings!



Loaded Chicken Nachos are best enjoyed fresh - plan to enjoy immediately! If you have leftovers, don't throw them in the trash! Reheat them in the oven until heated through for best results.
