Turkish Scrambled Eggs

Breakfast is a tricky meal for us. We don't want to spend all morning in the kitchen, leaving it a mess, but also don't want to eat the same thing every morning. We have rotating breakfast staples in our house, but every once in a while we enjoy mixing it up with a fun recipe like this. The hands-on time for this recipe is about 25 minutes, and it takes about 45 minutes total. Maybe not the best option for a busy morning before work or school, but a great idea to try on a Saturday (and maybe double to have leftovers to reheat for those busy mornings). 

This is one of those strange-sounding recipes that I wouldn't necessarily try based on the title. However, one day I had an abundance of eggs, tomatoes and peppers and this recipe fit the bill to utilize those ingredients! Give it a try - I promise it's worth the work in the morning.

It can be a little spicy, so make sure to tweak the ingredients based on your family's preferences. I also doubled the veggies in this recipe during the cook stage, and then took half the tomato mixture and set it aside before adding the eggs. The next day, it made the most incredible fresh salsa. I cooked one meal and got two uses out of it - my favorite!

Ingredients in Turkish Scrambled Eggs

Onions & Garlic - aromatic and delicious, we start most of the recipes in our home with onions and garlic in the frying pan. Adjust quantities based on what you have on hand and your family's preferences.

Peppers - jalapeƱos are our go-to pepper for this recipe, but you can adjust based on your family's preferences here as well! Habaneros will make it much spicier, whereas a bell pepper will add some flavor without any heat. You are the one who needs to enjoy this meal!

Tomatoes - Roasting the tomatoes first will bring out a ton of flavor. Think about roasting the tomatoes the night before when dinner is in the oven, and saving them in the fridge for the next morning! Outside of fresh tomato season, you can use a can of fire roasted tomatoes. 

Spices - Red pepper flakes and chipotle powder will add heat to this dish! Substitute paprika for chipotle powder for a more mild breakfast. The quantities listed below are for dried oregano - if using a fresh herb, the recommendation is to triple the quantity of seasoning. 

Eggs - farm fresh eggs from pastured chickens will provide the best flavor and nutrition for this meal! 



Cooking Instructions

Step OneThe Veggies
Heat the oil in a frying pan over medium-low heat. Add the onion and cook until translucent, 5-10 minutes. 
Add the garlic, peppers, red pepper flakes, paprika and oregano. Cook 5 more minutes until the peppers soften. 
Add tomatoes, season with salt and pepper and simmer for 15 minutes. 

Step Two: The Eggs
Turn the heat to low. Push tomato mixture to the side of the frying pan to make space for the eggs. Add the eggs. Gently stir until just cooked. Fold into the tomato mixture. 

Step Three: The Table
Serve with plain yogurt & toast, if desired.
